As director of fermentation for Id Est, an impact-driven restaurant group and grain mill based in Colorado, Mara King has spent her 20-plus year career as a food professional learning, practicing, and sharing knowledge around good food. Join Mara for a cooking demonstration and dining experience that teaches food heritage techniques for a sustainable future. Mara will share a variety of fermentation approaches and guests will have the opportunity to taste inventive, zero-waste cocktails and dishes from Executive Chef Byron Gomez of the James Beard Award-winning Id Est Hospitality group in Denver.  Whether you're a beginner or an experienced fermenter, this demonstration will provide a deeper understanding of how fermentation can be both an art and a preservation technique to reduce waste and create exciting and elevated flavors.

Tickets to events held at Platform at Pier 57 by the James Beard Foundation cover the cost of food, education and a unique dining experience. Meals are prepared by culinary masters from all regions of the United States and around the world. Unless otherwise stated, alcoholic beverages are provided on a complimentary basis and are not included in the ticket price.

Reservation Policy:

All reservations are non-refundable and must be made in advance. Should the event be cancelled due to any unforeseen circumstances, including COVID-19, JBF will offer a range of options, including ticket exchanges, the option to donate tickets, or a full refund.
